Find Slow Living at this Low-Tox, Off-grid Farmhouse Retreat in the Lush Hinterland of New South Wales

Perched above the lush green canopy of rainforest and tucked within 15 acres of regenerative farmland, Mountain Top Nimbin invites guests into a new rhythm of living—one where stillness, simplicity, and sensory connection are central. Just under an hour from Byron Bay, this peaceful farmhouse escape feels worlds away, yet is deeply connected to place.

A fully solar-powered, off-grid sanctuary, the renovated farmhouse is grounded in its low-tox, sustainable ethos for slow living.

Clean air flows freely through timber-framed interiors; filtered rainwater quenches your thirst; and everything—from the eco products in the bathroom to the iron cookware in the kitchen—is selected with health, comfort, and the environment in mind.

The farmhouse has been brought to life by Alexander Lotersztain and Monique Kawecki, partners in both life and creative practice.

Monique – our Editorial Director and co-founder of Champ Creative– found unity with Alex, an Argentinian-Australian designer, founder of the award-winning furniture brand Derlot and namesake Brisbane-based creative studio whom oversaw the interior design of Mountain Top Nimbin. Together, Monique and Alex have created a haven of sustainable design and circular living—an off-grid retreat that reflects their shared values of intention, collaboration, and working with rather than against nature.

Their approach to Mountain Top Nimbin is inherently dual: refined yet grounded, poetic yet practical, global in perspective yet rooted in the land. Every design decision here is thoughtful, personal, and infused with a deep connection to environment.

The home itself is humble and harmonious.

Three minimalist bedrooms—two Queen, one with twin King Singles—open out to expansive farmland views. A Loft retreat above serves as a quiet sanctuary for yoga, reading, or simply lying in repose, accompanied by a rich library of curated books and film.

The ‘full moon’ Japanese lantern (custom ordered from Japan) hangs above Derlot wicker seating and Sarah Ellison lounges. In the custom lounge by Derlot in the movie screening area, Argentinian artisan-made Pampa cushions can be enjoyed by guests, their softness and warmth bringing even more comfort.

In the kitchen, an ILVE 6-burner gas stove anchors a space built for shared meals and slow cooking with Alessi and cast-iron cookware, with fresh herbs and seasonal produce from the garden able to be picked by guests only steps away. Throughout the house, Koala Eco is used (both bathroom, kitchen and house cleaning) to ensure it is as low tox as possible, with no synthetic chemicals used in cleaning even bedding. While the farmhouse offers Starlink and a bluetooth speakers for those who wish to bring sound into the silence, most guests find themselves surrendering to nature’s own soundtrack. It is this rare balance—conscious comfort with minimal distraction—that defines the Mountain Top experience.

Outdoors, the rhythm slows even further: hammocks on the deck sway gently in the afternoon breeze; the resident family of wallabies appear from the tree line; bees buzz softly in the nearby Flow Hives, producing raw honey that finds its way into the pantry for guests.

Evenings are best spent with picnic blankets, wood-fired meals under the stars, and the glow of lanterns lighting the path back inside.

The journey to Mountain Top is through the lush hinterland, where roads are quiet and locals nod to say hi. Australian wildlife can be seen along the drive past native flora and cute small country towns. Whether arriving by car from the Gold Coast (just over an hour away), Brisbane (two hours), or just one hour from Byron Bay, the sense of arrival is always the same: a gentle exhale.

Here the fresh, crisp air consumes guests as soon as they step out onto the property, an intimate stay where the house and its surrounds is entirely just for the them.

Mountain Top Nimbin is not just a stay—it’s a recalibration. A place where time stretches, breath deepens, and presence becomes the only priority.
